Double Chocolate Easter Cupcakes
I wanted to share these super cute and delicious cupcakes, that are easy and fun to make and perfect for easter. Everyone likes them and they are a great opportunity for the whole family to do some baking and decorating together!
For 12 cupcakes you will need:
120 g flour (2 dl)
180 g caster sugar (2 dl)
0,5 tsp baking powder
1 tsp bicarbonate
1 tsp vanilla sugar
0,5 tsp salt
60 g kakao (1,5 dl)
120 g vegetable oil (1 dl and 2 tbsp)
2 dl hot water
For the frosting:
200 g dark chocolate (70%)
300 g unsalted butter
150 g icing sugar (2,5 dl)
1 tbsp vanilla sugar
1 pinch of salt
Turn the oven on to 170 degrees Celsius, or 340 degrees Fahrenheit.
Mix together egg and oil. Sift the dry ingredients and mix together in another bowl.
Fold the two mixes together and add hot water a little bit at a time to get a smooth cupcake batter.
Divide the batter in cupcake cases and bake for 15-18 minutes. Let them cool.
Start making the frosting by melting the dark chocolate and stir until it has cooled off a little bit.
Beat the butter for a few minutes and then start to add sifted icing sugar, vanilla sugar and salt.
Add the melted chocolate to the frosting and mix well. If the consistency of the frosting is too soft or runny, you can keep it in the fridge until it gets the right consistency for piping.
Pipe the cupcakes and decorate.
For the older, younger or for someone who can not fit more Easter food in their tummy, it is easy to make tiny mini cupcakes. They look cute and will be eaten.
I hope you like this recipe as much as I do, and if you want to make them at any other time of the year, just choose other decorations. They taste delicious all year around. My favorite topping for other times of the year is sea salt! Mmmm!
