Vanilla & Lemon Cupcakes

Yesterday i made these cute Vanilla & Lemon Cupcakes and they turned out well! They have a very fresh lemon taste and are perfect now that spring is here. Super quick and easy to make.


For 12 Cupcakes you will need:

  • 2 eggs

  • 60 g caster sugar (0.75 dl)

  • 1 tsp vanilla sugar

  • 90 g flour (90 g)

Buttercream frosting:

  • 150 g unsalted butter

  • 340 g icing sugar

  • juice from 1 squeezed lemon

  • optional food coloring




Turn your oven on to 180 degrees celsius or 350 degrees Fahrenheit.

Mix egg and sugar for about 10 minutes until it’s a thick, fluffy and white batter.

Add the vanilla sugar and sift the flour in to the batter.

Divide the batter into your baking cups and bake for about 12 minutes. Put the cupcakes aside and let cool.


Whip the room temperature butter for a few minutes until its fluffy.

Start by sifting half the amount of icing sugar in to the butter, and mix it well. Then add the rest of the icing sugar and mix.

Add lemon juice little by little until you get the right consistency of the buttercream. Pipe your cupcakes as desired.
