Easy Summer Pavlova
Super easy and delicious Pavlova!
The first step to this delicious dessert is to make meringue! Mix 4-5 egg whites with 3 dl sugar to a thick shiny meringue. Pipe on a baking paper, small round meringues with “walls” about 4-5 cm high. Bake in 230 degrees Fahrenheit for 1-2 hours, and let sit in the oven with no heat for a few more hours (1-3 hours).
I filled my pavlovas with lemon- and elderflower curd, whipped cream and fresh berries. Easy and good.
You can make lemon- and elderflower curd by mixing 1 dl freshly squeezed lemon juice, 1 tbsp lemon zest, 1/2 dl concentrated elderflower juice, 1.75 dl sugar, 2 egg yolks and 2 eggs in a saucepan. Let this mix come to a boil, and then let simmer on medium heat for about 5 minutes until it thickens a little bit. Put away from the heat and add 75 grams of butter in small pieces whilst stirring. Strain the mix into a new bowl and let cool off in the fridge for 2 hours.
Use a small spoon to place the lemon- and elderflower curd in the “hole” of the meringue. Topp off with whipped cream and fresh berries. I recommend strawberries because it goes so well with the elderflower.
